Toasted Coconut & Rose Protein Bliss Balls
Have you ever wondered, gosh I wish I could shop for nice organic, healthy brands without the huge mark up? Well now you can with Vitacost! I've been using Vitacost since I was 18 years old, fending for myself in college and attempting to eat and live a healthy life style while also on a budget. Refined sugar free, dairy free, gluten free, vegan - and I swear absolutely delicious! This recipe makes around 18-20 balls which should last a week, if you have self control and don't devour them like I did (oops, sorry not sorry!)
Ingredients:
2/3 cup of unsweetened shredded coconut (my favorite is Bobs Red Mill, from Vitacost!)
1/2 teaspoon cinnamon
1/2 teaspoon Yin powder Sun Potion
8 Pitted dates (available on Vitacost!)
2 teaspoon of rose water
1/2 plus a few more roasted cashews
Place cashews on a baking sheet and roast until LIGHTLY golden - they roast fast!
1/4 cup coconut flour (my favorite is Navitas)
1/4 cup of nut butter (my fav is Wild Friends Vanilla Protein Butter, available at Vitacost!)
1 tbsp of maple syrup or Wedderspoon Manuka honey
1 tsp vanilla
How to:
Preheat oven to 350 and lay coconut flakes sprinkled with some cinnamon evenly on baking sheet for 5 minutes
In a food processor, add dates, 1/2 cup toasted coconut, nuts and blend until it has a batter consistency - still a bit mealy
Pour the ‘batter’ into a bowl, and add in sweetener of choice, nut butter, coconut flour, rose water and vanilla
Mix well until combined
Roll into golf boll shaped sized or smaller
Place on a baking sheet in the fridge and let chill for 30 minutes before you eat
Best kept in the fridge or freezer for a week, enjoy in the morning or evening as a sweet treat!
