Chocolate Chunk Banana Bread

Chocolate, Nuts, Banana YUM

I’ll be honest here, it’s definitely more like banana cake than bread, due to how moist (lol that word) & flavorful it is inside! I make about two batches a month and eat a slice for breakfast before the gym or as a sweet treat after dinner! I highly recommend this guilt free deliciousness!

Ingredients:

  • 3 medium bananas

  • 1/2 cup of preferred nut butter

  • 3 local eggs

  • 3 tablespoons maple syrup

  • 1 tablespoon coconut oil

  • Splash of vanilla extract

  • 1/2 teaspoon of Ceylon cinnamon

  • 1/4 to 1/2 bar of Honey Mama’s chocolate (This batch was extra delicious because I used Honey Mama’s Ginger Cardamom chocolate)

  • 2 1/2 cups of almond flour

  • 1/4 teaspoon nutmeg

  • 3 teaspoon baking powder

  • 1/2 teaspoon kosher salt

  • 1/2 cup of nut mylk

How to:

  • Preheat oven to 350 degrees and line loaf pan with parchment paper

  • Mash all ingredients (except almond flour) into a bowl until smooth

  • Mix in almond flour, it will thicken

  • Bake for 45 minutes, check back every 10 minutes depending on your oven range

  • Should be cracked at the top & golden brown

  • Let cool for 15 minutes before slicing

  • VOILA! Enjoy with Vanilla Ghee, or nut butter!
