GARLIC ROASTED VEGGIE CHICKEN
Below you will find the easiest roasted chicken recipe to impress your friends with! All made within a 5qt dutch oven.
Ingredients:
One whole organic chicken
Four large shallots (or use onions if you need)
Four large carrots
Six celery stalks
10 small gold potatoes
Two cups of Chicken broth
One tablespoons of Thyme
One tablespoon of oregano
Two stalks of Rosemary
Olive oil
Four heads of Garlic
Salt & Pepper to taste
How to:
Reheat oven to 420 degrees
Chop all vegetables into one inch pieces
Put a drizzle of oil in the bottom of the pan with the chicken broth
Chop garlic in half and place in the bottom of the dutch oven
Place all vegetables into the dutch oven
Pat the chicken dry with paper towels and then season semi heavily with salt and pepper
Place chicken on top of vegetables and sprinkle the herbs into the dutch oven
Place in oven for 45 minutes then spin the dutch oven and place in the oven for another 45 minutes or until done
